There's always time to make an ice lolly!

Strawberry Ice Lolly (and it's healthy-ish!)

Creamy, refreshing and with no refined sugar, these strawberry ice lollies make a great frozen treat or dessert for summer. Plus, with only five ingredients they are super simple to make and much healthier than shop-bought ice lollies and ice creams!

8 large Strawberries 150g of natural organic Greek yogurt 3 tbsp of maple syrup or honey 1 tbsp of lemon juice ½ tsp of vanilla extract

You can also swap the Greek yogurt for some coconut milk and no vanilla extract!

Finely chop the strawberries and place them in a small sauté pan, cook them on a low heat until soft with 1 tbsp of water for 3 minutes.

Blend the strawberries with 1 tbsp of honey and the lemon juice until smooth, then pour into the lolly moulds and leave to the side.

Mix the yogurt with the vanilla and 2 tbsp of the honey/maple syrup until smooth, top up the rest of the lolly mould with this mixture and place in a stick. Pop in the freezer for 1 hour until set…then get stuck in!
