A favourite for a summer BBQ- Halloumi Skewers

Another skewer, sure, but one that contains halloumi, so is pretty much a must at any BBQ. Halloumi cheese is a) high in protein b) rich in calcium and c) simply delicious. We all know that protein is important for muscle repair in the body and eating foods that are super tasty are also good for the soul!

250g Halloumi (or Paneer as an alternative)

1 Courgette

1 Bell Pepper - any colour

24 cherry tomatoes

2 tablespoons olive oil

1 tablespoon red wine vinegar

1 lemon juice

2 tablespoons dried oregano

1 tablespoon dried thyme

2 garlic cloves crushed

1 pinch sea salt and black pepper

Why Halloumi? It's a semi-hard cheese which originated from Cyprus and you get all its gorgeous flavours once cooked. Halloumi is high in protein and calcium, but it is also a bit high on fat and salt so best to keep an eye on portion size.


  • Slice the courgettes into ribbons and dice the red pepper. Keep the cherry tomatoes whole.

  • Cut the halloumi into cubes of about 2cm.

  • Make the greek marinade with olive oil, red wine vinegar, garlic, salt, pepper, thyme and oregano, put all the ingredients into a bowl and mix well.

  • Thread the halloumi and vegetables onto the skewers. If you are using wooden skewers, make sure to soak them for at least 30 minutes first, so they don't burn when cooking.

  • Make sure your BBQ grill is oiled first and put the skewers on your grill for 5-6 minutes, turning every minutes.

  • Once cooked, drizzle the greek marinade over the skewers.

Great served with couscous and a gorgeous green salad. Enjoy the taste of summer!
