Speedy Pea Soup


This is a quick and easy soup to make and the colour is so vibrant.


  • 450g frozen peas

  • 1 large white onion chopped

  • Butter

  • 450ml of vegetable stock (Marigold Vegetable Boullion reduced salt is a great option if not using homemade)

  • Salt and pepper to season


  • Heat a medium pan and add a knob of butter

  • Once bubbling, add the chopped onion and cook taking care not to brown the onion

  • Add the stock and bring it to a rapid simmer

  • Add the peas and cook on a rolling boil until the peas are cooked through (should be no more than two to three minutes)

  • Once the the peas have softened, season with salt and pepper and blend until smooth

  • Add a little more stock if needed to find perfect consistency

  • Serve in warm bowls with fresh bread


  • Garnish the soup with some crispy pancetta or bacon pieces

  • Serve with croque monsieur or cheese on toast

  • To make a creamy soup, add 100ml cream when blending

This soup requires 10 minutes prep time, followed by five to 10 minutes cooking.
