
Speedy Pea Soup
Dinner
This is a quick and easy soup to make and the colour is so vibrant.
Ingredients

450g frozen peas

1 large white onion chopped

Butter
-
450ml of vegetable stock (Marigold Vegetable Boullion reduced salt is a great option if not using homemade)

Salt and pepper to season
Method

Heat a medium pan and add a knob of butter

Once bubbling, add the chopped onion and cook taking care not to brown the onion

Add the stock and bring it to a rapid simmer

Add the peas and cook on a rolling boil until the peas are cooked through (should be no more than two to three minutes)

Once the the peas have softened, season with salt and pepper and blend until smooth

Add a little more stock if needed to find perfect consistency

Serve in warm bowls with fresh bread
Tip:

Garnish the soup with some crispy pancetta or bacon pieces

Serve with croque monsieur or cheese on toast

To make a creamy soup, add 100ml cream when blending
