Beef Stir-fry with Courgetti

Dinner

Stir-fries are such a quick and easy dish to make and are very versatile.

Ingredients

  • 2 steaks cut into 2.5cm strips

  • 2 courgettes, ends cut off

  • 1 tbsp oil

  • 1 onion, finely chopped

  • 2 cloves of garlic, crushed

  • 3cm of fresh ginger, grated

  • 1 red chilli, finely chopped (optional)

  • 100g sugar snap peas, cut in half

  • Juice of 1 lime

  • 2 tbsp sesame seeds

  • 1 tbsp tamari soy sauce

  • Salt and pepper

Method

  • Season the steak with salt and pepper and a splash of tamari soy sauce

  • To make the courgetti, use a peeler, spiraliser or food processor to make fine strips of courgette. You can also just cut them into fine strips

  • Heat the oil in a large wok or pan and add the onion. Cook for three minutes taking care not to brown

  • Add the garlic, ginger and chill (if using) and cook for no more than a minute

  • Pop in the steak and stir fry with the vegetables until the steak is cooked through

  • Finally throw in the sugar snap peas, courgettes and tamari soy sauce and stir fry for a further three minutes, until cooked through

  • Remove from the heat and squeeze over the lime juice and sprinkle with sesame

 

Tip:

  • Change the steak for chicken, pork, prawns, tofu or just vegetables

  • Use different vegetables: peppers, tender stem broccoli, carrots, baby corn…

  • Use noodles or rice instead of courgetti

This meal requires 10 minutes prep time, and 10 minutes of cooking.
