Carrot & Raisin Bircher Muesli
Breakfast
Let the fridge do all of the work in this quick, easy and highly nutritious recipe.
Ingredients

100g fine oats

30g oat bran

1 carrot scrubbed and grated

1 tsp cinnamon

1/3 teaspoon ground ginger

20g raisins
-
1 tsp vanilla extract
-
1 tbsp raw honey
-
2 tbsp coconut flakes
-
300ml almond milk

Greek yogurt and seeds to serve
Method

Place all of the dry ingredients in a bowl and pour over the almond milk

Mix the ingredients together, then cover and place in the fridge overnight

In the morning you should have a creamy bowl of bircher muesli ready for your breakfast

Serve with a dollop of greek yogurt and a sprinkle of seeds

If you fancy adding a little something sweet, swirl over some maple syrup or honey

Grate an apple into the bircher mix

Add chopped nuts through the mixture or sprinkle on top
